After eating my egg white muffins all week, I wanted something that would fuel me up for the Be Well Philly Pop-Up Workouts at the Philadelphia Flower Show today, but taste like a weekend brunch.
I also had no patience for using the oven or for taking pictures, so for now, you’ll just have to imagine it. I will just have to make it again soon and take pics to add later.

Updated: I made it again, took pics, and instead of mixing the almond butter in, I baked it at 350 for about 8 minutes, then topped with almond butter.
Quick Baked Peaches & Creme Oatmeal

Ingredients
1/2 cup dry rolled oats
1/4 cup egg whites
1/4 cup unsweetened coconut almond milk
1 cup chopped frozen peaches
1/3 scoop vanilla soy protein powder
1 tbsp chia seeds
1 3/4 tbsp almond butter
1/2 tbsp Truvia
1/4 tsp pure vanilla extract
1/2 tsp cinnamon
Directions
1) Combine oats, protein powder, egg whites, frozen peaches in a microwave safe bowl, and microwave for 1 minute.
2) Remove and stir. Add almond coconut milk, and cook for another 90 seconds.
M3) Remove and stir. Add cinnamon, vanilla and Truvia, stir and cook for another 30 seconds.
4) Remove and add chia seeds and almond butter, stirring until well mixed and no extra liquid remains. If there is still some liquid, out back in microwave for 30 seconds.
