This is one of my all time favorite things to make. Its easy, you feel like you’re cheating and eating something much more unhealthy. And because its pizza, its family friendly. Your kids can make their own, and you might even get them to choose veggies! There are lots of great things about this, my personal favorite is that you can use whatever you’ve got around. Veggies, protein, sauce, check your freezer, fridge, and pantry, then have at it!

Chicken Sausage and Veggie Pizza

Serves 1 as a meal

Ingredients:
Cooking spray
2 Ezekial Sprouted Grain Tortillas (the big ones, smaller ones will work, just make a smaller pizza)
1/2 cup thick, veggie filled pasta sauce (I LOVE Newman’s Own Sockarooni)
2 tbsp Pecorino Romano dry grated
1/8 cup Go Veggie mozzarella style shreds
1/8 cup sweet red pepper
1/8 cup chopped cauliflower
1/8 cup chopped onion
1/8 cup chopped broccoli
2 asparagus spears diced
2 green beans diced
1 chicken & apple sausage diced
Garlic & Herb seasoning (Frontier is delicious, but so is Mrs. Dash)
Directions
1) Pre-heat oven to 350 degrees. Spray baking sheet with cooking spray (today I used coconut oil spray and it was delicious).
2) Lay one tortilla down, coat with thin layer of sauce and a sprinkle of pecorino. Cover with second tortilla and repeat. Then sprinkle mozzarella style shreds on top.

3) Sprinkle all veggies and sausage on top evenly. Sprinkle remaining pecorino and Garlic & Herb seasoning on top.

4) Put in the oven and bake for 10-15 minutes. Veggies should be brown and tortilla should be crisp around the edges


Annnnnd, now I want pizza. Is 9:04 too early?
