I love pancakes, but the version I grew up on is full of white flour and sugar. I’ve tested different versions to make them healthier, and with the help of Dairy Free Betty I created my perfect pancake. I used her recipe as a base, and made some adjustments to add a little more protein. There are lots of little adjustments you could make to make different favors, but I’ve now done these twice, and love the chocolate and strawberry combo.
Chocolate Protein Pancakes with Fresh Strawberries
Makes 1 serving

Ingredients
1/2 cup nonfat plain greek yogurt (Chobani is great for this b/c it’s not too thick)
1 egg white (I use liquid egg whites, because they are easy to measure)
2 tsp chocolate soy protein
1 tsp baking powder
1/4 cup maple syrup
1/2 cup, dry oats (not instant and not full stone ground)
1 tsp cinnamon
1 cup strawberries, sliced
Directions
1) Mix oatmeal, yogurt, egg whites, protein powder, cinnamon & baking powder together until well mixed.
2) Add to pan (spray with cooking spray if not nonstick) and cook on medium heat until browned on both sides. Will need squish due to thickness of batter.
3) Slice strawberries while cooking. When finished cooking. Sprinkle with strawberries, and drizzle with syrup. Enjoy!

I’ve made them a couple of times, and am in love with them. The fresh strawberries make them perfect, in my opinion π
